The Duke and the DirtyGringo Fish
A delicious blend of Dukes Mayo and Dirty Gringo on whiting.
- 2-3 Lbs. Fish I used Whiting
- 2 Onions Sliced Into Rings
- 4 Lemons Sliced
- 2 Tbs Dirty Gringo
- 1 Cup Dukes Mayo
- Place sliced onion into the bottom of the Flavor Anonymous Al Pastor pan. Layer sliced lemons on top of the onions. In a bowl mix the Dirty Gringo and Dukes Mayo thoroughly together. Spread the mixture evenly on the fish. Start your smoker and set it at 250, I added pecan to mine. Smoke fish until you reach 150 degrees.
