  • 4 Boneless Skinless Chicken Thighs
  • 1/4 Cup Dill Pickle Brine
  • 2 Tbs. Cock-A-VooDoo
  • 1 1/2 Cups Pitdaddy Chicken Dredge
  • 1/2 Cup Buttermilk
  • 1 Cup Lard


  • Trim excess fat from chicken thighs and place in a ziplock bag with dill pickle brine. Let sit for up to 3 hours refrigerated. Place lard in large cast iron skillet on med/high heat. Put buttermilk and dredge in separate bowls. Add 2 tsp. of Cock-A-VooDoo to Buttermilk and stir well. Place the chicken thigh in the dredge and coat, then into the buttermilk. Shake off excess and then coat with dredge again. Once grease is to desired temperature add the thighs, cook till golden brown and at least 170. Place thighs on some paper towels and coat with Cock-A-VooDoo. Coat the top bun with Sriracha Mayo and dill pickles, add your chicken thigh and enjoy!!!
