Dirty Gringo Quesadillas

  • chicken breast – 1 per person
  • 2 flour tortillas – per person
  • 1 dab of butter
  • 1 T Dirty Gringo per piece of chicken
  • 2 T olive/grapeseed or other oil
  • guacamole however you make it, for finish
  • shredded cheese of your liking fiesta blend, 4 cheese, colby jack
  • sour cream for finish
  • salsa verde optional
  • refried beans optional


  • saute chicken that has been seasoned with DG in hot pan with oil until done
  • let chicken rest so it can be sliced
  • add a dab of butter to one side of each tortilla
  • is a separate pan, warm one torilla at a time (butter side down) helps with browning
  • add chicken (layer ingredients)
  • add salsa
  • add cheese
  • add refried beans (optional)
  • add sprinkle of DG then top with other tortilla
  • flip and let the new tortilla get crispy
  • pull, let cool, cut into 1/4 and serve
