Bacon Onion Jam
Who doesn’t like jam right especially bacon onion jam! This bacony, sweet with a lil heat will make you burger or whatever you eat it on complete

Ingredients
- 4 Sweet Vadalia onions diced
- 2 Cloves Garlic minced
- 1 Cup Brown Sugar
- 1/4 Cup Maple Syrup
- 1.5 Lbs. Thick Cut Bacon cut into 1″ pieces
- 1 TBS Cock-A-Voodoo Cock-A-Voodo
- 1 TBS Dirty Gringo Dirty Gringo
- 1 tsp Red Pepper Flakes
- 3/4 Cup Black Coffee
- 1/2 Cup Apple Cider Vinegar
- 2 tsp Balsamic vVnegar
- 1 TBS Bacon Grease reserved from cooked bacon
Instructions
- Start prepping onions, garlic , and bacon
- Heat a high rimmed pan or Dutch oven
- Cook bacon pieces, until start to turn brown
- Remove bacon, drain on paper towel
- Drain pan of bacon fat, reserving 1 tablespoon
- Return pan to medium heat with reserved fat
- Add Onions and cook until translucent
- Add garlic to pan and cook until fragrant
- Add Apple cider balsamic vinegar, & coffee
- Add Brown sugar, maple syrup, CAV, TDG, and red pepper flakes
- Mix together and bring to a boil; cook 3 minute
- Set cooker to high
- Transfer to a slow cooker; cook uncovered
- Cook 5-6 hours until mixture become syrupy
- Transfer to food processor; pulse until chunky
- Place in a air container
- Refrigerate and keep 2-4 weeks
